Grown on the rugged mountain landscapes in the subtropical rainforest of Chiapas. The region is home to the famous ancient Mayan ruins of Palenque, Yaxchilán and Bonampak and one of the world’s largest concentrations of indigenous people.
This coffee is produced by GRAPOS, Organic & Sustainable Producer Advisory Group, which collaborates with more than 2,600 local small coffee farms. This cooperative does much more than provide us great coffee--It also provides essential services to its members, including access to financial resources, technical assistance, and community development programs such as a women's knitting program and mushroom cultivation project, which helpi to boost these families' income.
We roast this coffee at a Full City Roast level, yielding a medium body with low acidity. In your cup, this Altos de Chiapas roast is slightly nutty, sweet, and smooth, with an exceptional note of tobacco.
